Burgenländer Gänseleber (goose liver)

Origen: Weinidylle Südburgenland (Austria)

Ingredients: 400 g goose liver, ½ l milk, salt, 80 g goose fat, 1 onion, 1 knife point paprika.

Method of preparation: Clean the goose liver with water an put it into milk (approx. one hour). Take it out, dry and salt it. Heat the fat in a casserole, put the goose liver and the sliced onion into the fat. Bake it for approx. 20 minutes in the oven (douse for several times). Slice the goose liver. Douse it with dripping (dripping stirred up with paprika). Serve it very hot with toasted bread or baked apple.
